Flavor: Aromas of bing cherry and dark olive, with hints of pepper and oak. Juicy cherry and black-currant flavors, and soft, round tannins. Food Pairing: Pair with lamb, beef, pork, veal, poultry, pasta and bean dishes, especially those featuring brown sauces or fresh herbs, and medium-flavored cheeses. Vineyard: Grown on calcareous, silty loam and clay soils on bench-lands overlooking the Estrella River, east of Paso Robles city. Winery: Fermented in temperature-controlled stainless steel tanks for about two weeks, pressed off to age 9 months in tank and barrel.
